What is Beta Carotene?
The term ‘carotene’ was created in 1831 by a scientist named Wachenroder. Wachenroder discovered carotene when he crystallized carrot roots. Beta carotene is in a class called carotenoids that are brightly pigmented in yellows, oranges and reds. Carotenoids can be found in several fruits and vegetables and is fat soluble as well. Sweet potatoes, grains, carrots, green peppers, apricots and squash are food choices that contain carotenoids. Due to their ability to convert to active form of Vitamin A, alpha, beta and gamma carotene are consider to be provitamins.
